148 BPM 2024 Colour|RedA new pet nat of supreme refreshment, made with 70% Gros Vert, an obscure grape not often cultivated for winemaking that Val purchases from a neighbouring organic grower in Luberon. It can be harvested very late in the season whilst retaining high acidity and, as its name suggests, an underripe, green character. The sides of the valley slope steeply upwards and eventually turn into the snow-capped mountains of the Swiss Alps

Served on the rocks with a glug of soda and a slice of orange

The whole thing sits in a really nice balance

with some deeper notes of dried stone fruit too

and an incredible aromatic profile of ginger and apricots

after which the wine is bottled with no additions

Citrus notes have an oily quality

with citrus fruits
