Palate Red apples and white grapes

A few months later the wines are racked off the lees and returned to the barrels for the completion of barrel-maturation

The juice and fibres of the agave are then slowly infused and distilled together

Nose: Raisins and syrupy plums notes quickly blend into dark muscovado sugar

vanilla and hints of red berries

our distillers hand-select individual barrels that meet the specifications they've established
